SUMMARY:Visit Swale at Brooklyn Army Terminal Pier 4
DESCRIPTION:Swale is a floating food forest built atop a barge that travels to piers in New York City\, offering educational programming and welcoming visitors to harvest herbs\, fruits and vegetables for free. Swale strives to strengthen stewardship of public waterways and land\, while working to shift policies that will increase the presence of edible perennial landscapes. \nSwale was founded in 2016 by artist Mary Mattingly\, through a grant from A Blade of Grass. \nIn the summer of 2016\, Swale launched at Concrete Plant Park in the South Bronx\, one of the largest food deserts in the United States. Food deserts are a reality in many communities in New York City; as many as three million New Yorkers live in communities with limited access to places where they can get fresh produce. Swale began as an idea to advocate for food to be grown on some of the 30\,000 acres of public land in New York City\, through urban stewardship initiatives led by community partners in the South Bronx. \nSwale currently works with Youth Ministries for Peace and Justice to run free public programming\, while also providing professional development opportunities for young folks in the South Bronx. In the summer of 2017\, Swale will continue to collaborate with Bronx River Alliance\, The Point and the New York City Parks Department to expand access to public food in the South Bronx. \n**Free and open to the public on Saturdays and Sundays 12-6pm** \n**Swale will be moving to Governor’s Island beginning in September**

SUMMARY:Climate Change and Socio-Demographic Dynamics in Mexico
DESCRIPTION:This presentation will discuss two studies on the impacts of climate change in Mexico. The first uses novel estimates of climate change impacts on agricultural productivity and food prices in Mexico to examine how this will differentially influence rural vs urban poverty in Mexico (2020–2040). DESCRIPTION:Join Dan Barber\, chef and co-owner of two restaurants\, Blue Hill in Manhattan’s Greenwich Village and Blue Hill at Stone Barns in Pocantico Hills\, NY\, and New York Times Food reporter Julia Moskin for a conversation about how we can rethink what\, and how\, we eat. A food industry revolutionary\, most recently Barber has spearheaded a food waste pop-up restaurant\, WastED\, where he and big-name guest chefs serve dishes composed entirely of ingredients that normally would be destined for the garbage — kale ribs\, fish heads\, and bruised produce.  \nAbout the Speakers:\nDan Barber is the chef and co-owner of Blue Hill and Blue Hill at Stone Barns\, and the author of The Third Plate (May 2014\, The Penguin Press). His opinions on food and agricultural policy have appeared in The New York Times\, along with many other publications. Appointed by President Barack Obama to serve on the President’s Council on Physical Fitness\, Sports and Nutrition\, Barber continues the work that he began as a member of Stone Barns Center for Food and Agriculture’s board of directors: to blur the line between the dining experience and the educational\, bringing the principles of good farming directly to the table.  \nJulia Moskin has been a New York Times Food staff reporter since 2004. She reports news\, writes profiles\, and spots trends. Most pointedly\, she has exposed the frequent use of ghostwriters by celebrity cookbook authors\, and her investigation into the finances of the James Beard Foundation led to the resignation of its entire board of trustees. For the third installment of our summer beekeeping series you’re in for a treat\, It’s time for honey harvest!   \nThere’s no classroom component to this hands-on course.  Instead\, we’ll head right on up to the rooftop apiary\, where participants will first learn how to differentiate between unripe nectar and honey that is ready to harvest.  Once we’ve determined that the bees have finished their work and the honey has thickened to a stable viscosity\, beekeeper Carin Zinter will show us how to remove the bees from the honey manually. \nFrom there\, we’ll move into the extraction room where participants will uncap frames of honey for extraction; extract honey with a centrifugal honey extractor; filter and jar the honey\, and take part in a honey tasting.  You’ll never take a teaspoon of honey for granted again.

While pedaling gelato\, Kate Zuckerman\, pastry chef and owner of the Sweetcycle\, will discuss the science behind ice cream and gelato making: what gels make the perfect custard; the correct chilling temperatures to minimize ice crystal formation; the optimal dasher shape and speed to churn the gelato; and the best ratios of cream and\nmilk for taste and texture. \nNext\, we will learn how to infuse flavor into an eggless\, dairy gelato custard base. Using\nsome herbs and honey from the farm and crunchy mix-ins\, participants will create their\nown seasonal flavor combinations – Anise Hyssop-Maple; Honey Lavender Pecan;\nHoney Rosemary Walnut; Fresh Mint Chip. Participants will take home one quart of ice cream base to churn at home. \nAt then end of the class\, after taking a tour of the farm\, we will enjoy the fruits of our\nlabor and eat the gelato we pedal-churned with a selection of crunchy toppings. \nWeather permitting the class will take place outdoors. In the case of inclement weather\, the class will take place in our indoor loft space.

DESCRIPTION:As people who spend our days farming\, we strive to see as little food waste as possible. Simply stated\, wasted food is wasted energy. So we look for ways we can cut down\, we turn bruised peppers into hot sauce and split tomatoes into sauce. After our big butcher paper dinners\, crab and crawfish bodies are added to our compost. As the shells break down\, the calcium and other nutrients help enrich the soil. But what about the crops that we simply don’t have a market for? The edible weeds and seeds that are found in abundance on our farm but at the end of the day are not harvested because we don’t have a buyer. As farmers\, we are just one part of the equation. We need creative chefs who are looking to solve the same problems we are and are considering the full picture. \nIn steps chef Winston Chiu of BonBite. When he came to us with the idea of a compost dinner\, where the whole focus is to create a whole meal from crops that would otherwise be considered waste\, we were more than intrigued. We were excited. The chef will be working with our farmers over the next several months to glean from the edges of the fields\, gathering all the ingredients he needs to make a bountiful meal. \nIt’s a farm dinner of epic proportions and you are invited to the feast! \nEntrees will be served family style. Menu and more details coming soon!

DESCRIPTION:Come pedal the Sweetcycle – a stationary bike capable of pedal powering a high-speed Blendtec blender! To begin this workshop\, participants will harvest the herbs and greens needed to make our three types of pesto (Basil\, Arugula and Cilantro) from our rooftop farm.  \nAfter the ingredients are harvested and measured\, participants will take turns pedaling while we discuss what other herbs\, nuts\, and bitter greens make great pestos.  We will consider the role of acidic ingredients like lemon juice and its alternatives — sumac\, cider vinegar\, and amchoor powder.  We will discuss the role of and flavor profile of nuts and learn what to substitute if you need to make a nut free pesto.  We will also consider some alternatives for olive oil and Parmigiano cheese.  \nTowards the end of the class\, while we prepare some pasta\, you will take a tour of the farm.  Once everyone is assembled back in the cooking area we will taste the pestos with warm pasta and corn tortillas.  \nWe will send you home with an 8 oz. container of pesto to enjoy with friends and family.

The neighborhood lacks well designed pedestrian or bicycle infrastructure\, making many intersections dangerous or difficult to navigate. This project seeks to reframe the school grounds as a next great public space and an entry point for an accessible urban trail system to connect underutilized areas of the Bronx. \n\n\n\n\n\n

DESCRIPTION:Permaculture\, a portmanteau of permanent and agriculture\, is sometimes described as strategies for sustainable agriculture\, with the twin goals of maximizing yield and maintaining optimum long-term ecological health. With increasing numbers of people living in cities\, and urban agriculture the subject of perennially renewed interest\, permaculture offers many strategies beyond urban gardening that can be applied to both the design of the urban ecosystem and the modern city-dweller lifestyle.\n \nThrough this broader lens\, permaculture is a whole-systems approach to human society\, probing the ecological and sociological connections between human behavior and our cultivation of natural resources. Far broader than mere sustainable agriculture\, permaculture is a design methodology for the human-ecological condition\, and is the best answer to the question “What next?” Permaculture has the potential to transform the future\, but first we have to bring it mainstream. How do we scale permaculture to redesign the massive agricultural\, food\, and consumer culture systems for long-term health and sustainability? What is the way forward given the sociopolitical challenges we currently face? How can a focus on local actions collectively alter a global system? DESCRIPTION:On January 28th\, The Active Citizen is partnering with City Harvest to address hunger in New York City by volunteering at a mobile market. Food insecurity impacts approximately 1.4 million New Yorkers. For many of these New Yorkers\, healthy food is unavailable and unaffordable. Lack of access to enough food for an active\, healthy life can have devestating consequences on communities\, and diseases related to poor nutrition\, including diabetes and heart disease\, are often concentrated where demand for emergency food is the greatest. \nTAC will be working at the mobile market\, a farmers-market style food distribution\, to provide fruits and vegetables to low-income communities.  Mobile markets provide the opportunity to lend strong\, direct services to communities in need and we are excited for this event!
