DESCRIPTION:Join Dan Barber\, chef and co-owner of two restaurants\, Blue Hill in Manhattan’s Greenwich Village and Blue Hill at Stone Barns in Pocantico Hills\, NY\, and New York Times Food reporter Julia Moskin for a conversation about how we can rethink what\, and how\, we eat. A food industry revolutionary\, most recently Barber has spearheaded a food waste pop-up restaurant\, WastED\, where he and big-name guest chefs serve dishes composed entirely of ingredients that normally would be destined for the garbage — kale ribs\, fish heads\, and bruised produce.  \nAbout the Speakers:\nDan Barber is the chef and co-owner of Blue Hill and Blue Hill at Stone Barns\, and the author of The Third Plate (May 2014\, The Penguin Press). His opinions on food and agricultural policy have appeared in The New York Times\, along with many other publications. Appointed by President Barack Obama to serve on the President’s Council on Physical Fitness\, Sports and Nutrition\, Barber continues the work that he began as a member of Stone Barns Center for Food and Agriculture’s board of directors: to blur the line between the dining experience and the educational\, bringing the principles of good farming directly to the table.  \nJulia Moskin has been a New York Times Food staff reporter since 2004. She reports news\, writes profiles\, and spots trends. Most pointedly\, she has exposed the frequent use of ghostwriters by celebrity cookbook authors\, and her investigation into the finances of the James Beard Foundation led to the resignation of its entire board of trustees. He has interlocking expertise in water resource and water utility management\, infrastructure economics\, and public finance\, land use and landscape preservation\, and the economics of sustainable development. Previously\, Mr. Appleton served as Commissioner of the New York City Department of Environmental Protection (DEP) and Director of the New York City Water and Sewer system. \nJim Dwyer has spent most of his professional life covering the city as a reporter\, columnist and author. He joined the Times in May 2001 after stints at the Daily News\, New York Newsday and several papers in northern New Jersey. His work for the Times has included coverage of 9/11\, the Iraq War\, the 2004 presidential campaign and law enforcement surveillance of political activities. He has written the About New York column since 2007. The winner of the 1995 Pulitzer Prize for commentary and a co-recipient of the 1992 Pulitzer for breaking news\, Dwyer is also the author or co-author of six books. \nPaul Gallay is the President of Riverkeeper\, working to protect the Hudson River and the drinking water supplies for nine million New Yorkers. An attorney and educator\, Gallay has dedicated himself to the environmental movement since 1987\, when he left the private practice of law and went to work for the New York State Attorney General. In 1990\, Gallay began a ten-year stint at New York’s Department of Environmental Conservation\, where he brought hundreds of corporate and government polluters to justice.  \nStacy Levy collaborates directly with natural processes like tides\, erosion\, plant growth\, wind direction and rain. She creates large-scale sculpture installations to show the presence of nature in the city. Her projects often float on urban rivers and lakes\, or are embedded into parking lots and streets. Many of her recent projects utilize storm water runoff\, to make rainwater an asset to the site. Her works have been shown at Documenta 11\, Mass MoCA\, & Wave Hill. DESCRIPTION:The role of sports as a social tool is marked by the ways in which athletes challenge the structure of the game through their own representation within and beyond the field. This conversation\, focusing on fútbol\, aims to expand upon how the game is a critical and aesthetic tool that links indigenous heritage with current social issues. Moderated by Marcela Guerrero\, Assistant Curator at The Whitney Museum of American Art\, and referencing the work of Betty Bastidas\, director of Dreamtown and Ronny Quevedo’s exhibition no hay medio tiempo / there is no halftime\, the panel investigates a cultural tradition inherited from the past that cuts across several temporalities in the Americas as well as diverse local histories\, which in Ecuador includes its African diaspora and immigration to new territories. \nFollowing the panel Betty Bastida’s film Dreamtown will be screened as part of Passport Thursdays: International Dance\, Music\, and Film Series. \nModerator: Marcela Guerrero\nPanelists: Betty Bastidas and Ronny Quevedo \nBetty Bastidas is an award-winning filmmaker\, photographer and media educator based in Brooklyn\, NY. Originally from Ecuador\, came to the US at the age of nine. She uses filmmaking and photography as social tools to celebrate the strength of the human spirit in the face of adversity. Most recently\, she completed her first international soccer feature\, Dreamtown\, following the precarious dream of a young Afro-Ecuadorian soccer player\, Anibal Chala\, as he strives to make it to the professional leagues\, and over the span of six years sees his dreams become reality. Other credits include a commissioned short film for ITVS Latino Graduates called Can’t Hold Me Back\, following Fernando\, a Latino youth from Detroit as he becomes the first in his family to earn a high school diploma. This story aired on PBS Independent Lens in 2013 and was selected to be part of the PBS Online Film Festival. She is the co-founder of a multicultural production company called Maracuya Productions focusing on stories of injustice and inspiration for underrepresented communities in the US and abroad. Her work has garnered numerous awards\, including 2013 and 2008 NALAC Fund for the Arts\, NALIP/HBO Film Grant\, Post-production grant from the CNCINE Ecuador\, New York Women in Film & Television In-kind grant\, NYFA Photography Fellowship\, and Brooklyn Council of the Arts Community Grant. She is a graduate of the UC Berkeley Graduate School of Journalism and is based in Brooklyn\, NY. \nMarcela Guerrero is Assistant Curator at The Whitney Museum of American Art. From 2014 to 2017 she worked as Curatorial Fellow at the Hammer Museum in Los Angeles where she had a hand in curating—with Cecilia Fajardo-Hill and Andrea Giunta—the upcoming Hammer exhibition Radical Women: Latin American Art\, 1960–1985\, for the Getty Foundation’s initiative Pacific Standard Time: LA/LA. Prior to her tenure at the Hammer\, she worked in the Latin American and Latino art department at the Museum of Fine Arts\, Houston\, where she served as research coordinator for the International Center for the Arts of the Americas. She has also written for a variety of arts publications\, such as ArtNexus\, Caribbean Intransit: The Arts Journal\, and Gulf Coast: A Journal of Literature and Fine Arts. Guerrero holds a PhD in art history from the University of Wisconsin\, Madison. \nRonny Quevedo is a recipient of the 2016 Queens Museum/Jerome Foundation Fellowship for Emerging Artists. He was recently awarded a 2017 A Blade of Grass Fellowship for Socially Engaged Art and a Socrates Sculpture Park Emerging Artist Fellowship. His work has been exhibited nationally and internationally at The Drawing Center; The Bronx Museum of the Arts; Museum of Fine Arts\, Houston; and Emerson Gallery (Germany)\, amongst others. Residencies include Lower Manhattan Cultural Council’s Workspace Program\, Kala Art Institute\, the Core Program at the Museum of Fine Arts\, Houston\, Project Row Houses\, Skowhegan School of Painting & Sculpture\, and Lower East Side Printshop. Quevedo received his MFA from the Yale School of Art in 2013 and BFA from The Cooper Union in 2003.

SUMMARY:Bicycle Powered Gelato Making Workshop
DESCRIPTION:Come pedal the Sweetcycle – a stationary bike capable of pedal powering an ice cream churn. While pedaling gelato\, Kate Zuckerman\, pastry chef and owner of the Sweetcycle\, will discuss the science behind ice cream and gelato making: what gels make the perfect custard; the correct chilling temperatures to minimize ice crystal formation; the optimal dasher shape and speed to churn the gelato; and the best ratios of cream and\nmilk for taste and texture. \nNext\, we will learn how to infuse flavor into an eggless\, dairy gelato custard base. Using\nsome herbs and honey from the farm and crunchy mix-ins\, participants will create their\nown seasonal flavor combinations – Anise Hyssop-Maple; Honey Lavender Pecan;\nHoney Rosemary Walnut; Fresh Mint Chip. Participants will take home one quart of ice cream base to churn at home. \nAt then end of the class\, after taking a tour of the farm\, we will enjoy the fruits of our\nlabor and eat the gelato we pedal-churned with a selection of crunchy toppings. \nWeather permitting the class will take place outdoors. In the case of inclement weather\, the class will take place in our indoor loft space.
